I love Ilocano/Vigan longganisa! I remember my grandmother would always bring us some when we were kids. I love the savory, tangy and somewhat spicy taste! Thank you for sharing your recipe!

Chef, I'm from Vigan. Iyong manner of preparation parang sa Batac, Ilocos Norte. Vigan longanisa has more garlic and pepper. We don't stuff the meat by machine. We put the meat by funnel and tie it manually fast. Lastly, Vigan's has a gap in between longganisa's (about 1 cm) so that you can cook them individually while maintining their form.
